Instructions: 4 cups dixie lilly seafood breader mix
1/4 cup lawry's seasoned salt
1/4 cup lawry's garlic salt
1 tablespoon black pepper
Mix above ingredients in bowl.
Cover fish with fresh buttermilk in large bowl and place in fridge for 1 hour.
Heat peanut oil to 375 degrees.
Cover fish with mix and place in oil until pieces of fish float or turn brown. do not over cook.
Serve with grits and hush puppy's
Fresh fish caught out of BOB'S boat are best and fresh.
Fish are caught daily at fosters by the lake.

Instructions: 4 cups of granulated sugar
1/4 lb butter (salted)
1 cup evaporated milk or cream
1 jar of marshmallow fluff ( 7 1/2 ounce)
Put the above in a large sauce pan and let it boil while stirring constantly.
Make sure that once it starts to boil, it is allowed to boil for five minutes.
Remove from heat
Add 1 package of chocolate bits (12 ounce)
1 tablespoon of vanilla
If you WANT nuts in your fudge now is the time to add 1 cup of nuts.
Stir until chocolate is melted
Pour into BUTTERED 13x9 pan and let cool.
( make sure to buttered the whole inside of the pan.)

Instructions: 8oz. sour cream
8oz. cream cheese
1 package of taco seasoning
1 jar salsa (hot or mild) lettuce tomatoes
2-4 cups of mild cheddar cheese (the more the better)

Directions: Combine the cream cheese and sour cream with the taco seasoning with electric mixer until smooth.
Spread on large tray. Cover with salsa.
Next cover the salsa with chopped lettuce, and diced tomatoes.
Cover the whole thing with cheese. serve with tortilla chips.
Eat quickly because it never lasts.

Instructions:

Ingredients:

leeks (3 good sized) sliced
2 or 3 garlic cloves, finely chopped
carrots (3 or 4), sliced
celery (I use the celery heart and all the leaves) sliced
spring cabbage (leaves of about 1/2) sliced

Directions:

Heat some olive oil in a heavy based saucepan and add the leeks and garlic, stirring to coat. Put on the lid, stirring occasionally, on a low heat, and sweat the veg for 10 mins or so.
Add the carrots and celery and continue to sweat.
After another 5 mins or so add the cabbage, herbs and paprika and stir in.
After sweating all the veg together for another 5 mins add the lentils, stir to coat with oil, and then pour in the hot stock.
Bring to the boil, then turn down heat, pop on the lid, and leave to cook for maybe 30 mins. Add some more water if necessary during the cooking time.
Blend the whole soup in batches until roughly smooth, return to the pan and reheat, seasoning to taste.
Serve with crusty bread or, even better, make chips by peeling and 'chipping' potatoes, parboiling, then roasting in a hot oven with plenty of olive oil and salt.
